There's more to tea than what's in the cup. A series of 5 weekly social teas for you, your friends or your business associates. The Tea Leaf will provide you with the teas, recipes, menu suggestions, brewing instructions and all you need to create a relaxing, revitalizing unique break in your busy day. You will study the etiquette of the service of Cream, Light, Full and High Tea including different service options and appropriate food menus. You will study basic tea food paring principles as part of the basic menu planning process.

The first of a series of three 5 week courses for those interested in learning more about tea, its' production, its' origin, its' health benefits, how to brew it and appreciate it like a connoisseur. Online lessons, including brewing, tasting and evaluating the 5 categories of teas and tisanes, are supported by tastings you conduct in your home.

In the second course you will expand on your Basics tea experience. A more indepth study of teas and tisanes, including what influence the origin of the tea (Africa, Indian Sub-continent, the Far East) and the production methods used, have on the individual characteristics of each tea. Tasting will Include higher quality teas from India, China and Japan.

  Tea Appreciation - Advanced Tea for Hospitality Professionals  
       

In the third course you will expand on your Intermediate tea experience. Your attention will be focused on developing your tasting experience. You will taste the finest teas, and investigate food-tea and food-wine-tea matching. Learn to develop your own tea blends and use tea in the preparation of food & other beverages.

This course is designed for those persons in the hospitality industry who are responsible for the selection of teas and food on the facilities tea menu, and the prepartion of and service of tea within the facility. Service methods and sample food selections will be studied.
